More than ever before, people are deeply considering  the impact of the food they consume on their personal health and the environment—COVID-19 placed an exclamation mark on this awareness. Through this panel we will explore emerging trends in the evolution of the consumer relationship to food, including:  personal “food footprints”, “food as medicine” and “food justice.”
